Filter only, since day one

Six ways to brew a coffee, none of them under pressure. We grind, weigh and pour every cup at the bar on Gottschedstraße — and we roast what we pour.

01Why there is no machine

One question we answer every day

An espresso machine costs as much as a small car, takes a metre of counter and asks a barista to spend the shift with their back to you. We put that metre, that money and that attention into water, grinders and time instead. What comes out is clearer, cheaper and takes four minutes.

  • 01Water treated to 60 ppm hardness, tested weekly
  • 02Three grinders, one per grind size, cleaned daily
  • 03Roasted in Plagwitz twice a week, roast date on every bag
  • 04Spent grounds free by the door, filters composted

03On the shelf

Six coffees, 250 g bags, roast date on the seam

Everything we pour at the bar is on the shelf next to it. Each bean page carries our house recipe and a calculator that scales it to whatever you brew into.

What people say once they stop asking for a cappuccino

  • I came in asking for a cappuccino, was politely told no, and left with a Kalita and a bag of Kenya. Two years later I still have not asked again.

    Anke R.

    Regular, Waldstraßenviertel

  • Two and a half hours, four brewers, and the first time anyone explained why my coffee at home tasted like wet cardboard. It was the grinder.

    Milan T.

    Brew class, March

  • The batch brew is three twenty and better than most places charge four fifty for. I do not need it to be an event every morning.

06Questions

Asked at the counter, answered here

Really no espresso machine?

Really. No espresso, no cappuccino, no flat white. We put the money and the counter space into three grinders, a water treatment system and a fridge full of green coffee instead. There are excellent espresso bars within four minutes of our door and we will happily point you to one.

Can I get milk in it?

Cold whole milk or oat milk on the side of a batch brew, yes. We will not steam it, because there is nothing here to steam it with.

How long does a hand brew take?

Between three and five minutes from the moment you order, plus whatever queue is in front of you. If you are in a hurry, the batch brew on the counter is poured in ten seconds and is a genuinely good coffee.

Do you roast yourselves?

Yes, on a 5 kg drum roaster in Plagwitz, twice a week. Every bag carries its roast date, and we do not sell coffee older than four weeks off the shelf.

Can I work here?

For an hour or two, gladly — there are sockets along the window bench and the wifi password is on your receipt. From 12:00 to 14:00 on weekdays we keep the tables free for people eating.

What do you do with the spent grounds?

They go into a bin by the door. Take as much as you want for your garden; the rest goes to a community garden in Lindenau on Fridays.
